Reimagining Brimmer Lunches

Our Chef & Food Service Director Craig Roman, who previously served as Brimmer’s Sous Chef for the past three years, has done an outstanding job feeding our entire School Community in a new way. Some of the amazing offerings (pictured) have included, Greek Chicken Bowl, House Made Hummus and Tzatziki, Tabbouleh and Pita Bread; Teriyaki Chicken and Noodle Salad with Miso Cucumbers and Oranges; and Southwest Chicken Salad, Chipotle Lime Dressing, Pita Bread and Fruit.
 
Roman states, “the dining staff and I are here to provide our students with a nutritious and delicious lunch and snack every day. Lunch is a time when our students can relax and take their minds off of classroom work for a few minutes. Our goal is to keep that mindset and provide the best comfort and service we can for our ‘new normal.’
 
While food safety and handling have always been a priority, we have incorporated new protocols for food preparation and delivery within the guidelines set during the COVID-19 pandemic. All dining staff and faculty have been trained in our new procedures so that our community will receive meals in the safest way possible.
 
We use insulated delivery bags to transport the food to the classrooms. The bags are labeled with the meal of the day, a list of all of the ingredients, and any allergy concerns for that specific meal. The food is packed in three compartment covered lunch boxes, so each student receives their own individual lunch.”
